Just because you are on a low carb or keto based diet, there is no reason to miss out on one of our absolute British cream tea classics like a delicious Low Carb, Keto Scone loaded with strawberry jam and lovely thick cream.

Try our Keto scones made with almond flour to keep them low in carbs. They are still fluffy and taste fantastic.

Ingredients

  • 300g Almond Flour

  • 1.5 tsp. Baking powder

  • 1/2 tsp. Salt

  • 75g Unsalted butter (Cold from the fridge or freeze and grate the butter)

  • 3 Free range eggs (the whites only & cold from the fridge)

  • 20ml water (Cold)

Directions

  • Ensure that all of your ingredients, including your flour, has been chilled for at least half an hour in the fridge.

    When ready and cool, add your flour and butter to a mixing bowl and cut the butter and other ingredients in by hand until you get a lovely dry flaky consistency to the mix.

    Add the remaining dry ingredients (Salt & Baking Powder) to the bowl and stir through with a spoon until evenly combined.
  • Add the cold egg whites gradually whilst folding through the mixture until all combined.
  • Roll out the dough on a floured surface (use almond flour) and using a medium cutter, push down on the dough to cut your scones, push your scone from the cutter. (Do not twist the cutter as the scones may not rise)
  • Line a baking tray with greaseproof paper and place you scones on the tray allowing an inch between each scone for the scones to grow.
  • Place in a preheated oven at 200 Celsius / 400 Fahrenheit / Gas Mark 6 for 20 minutes, until golden in colour.
  • Remove and rest on wire rack for 10 minutes then enjoy with some jam and cream. Just delicious!

Notes

  • If you do not fancy cutting all the ingredients by hand in a bowl, combining in a food processer is also just fine.
