Simply The Best Cheese Omelette

This is just the perfect creamy cheesy omelette and finished with rocket, spring onions and baby plum tomatoes. So good!

This recipe is my pre slimming world recipe and although this omelette recipe is not a slimming friendly recipe it is still a fantastic Cheese Omelette and well worth a try.

This is just the perfect creamy cheesy omelette and finished with rocket, spring onions and baby plum tomatoes. So good!

Ingredients

  • 3 fresh eggs.

  • Butter (Just a couple of cubes)

  • Cheddar cheese (grated)

  • Salt

  • Pepper

  • TO SERVE / GARNISH
  • Rocket

  • Spring Onions (Sliced)

  • Baby plumb tomatoes (or baby vine ripened tomatoes)

  • Olive Oil

Directions

  • Bring a flat pan to a medium heat and ad a couple of cubes of butter to the pan.
  • Whisk the eggs together and add a little black pepper to the eggs.

    Note: When you are whisking eggs, you can season with freshly ground black pepper but don’t add salt to the mix as this may start to break the eggs down before you start to cook and you may lose that lovely fluffy texture to your eggs.
  • Once the butter has fully melted and is coating the base of the pan, add your eggs to the pan and a inch of salt yo taste.

    With a soft spatula, push the eggs around and away from the edges of the pan, tilting the pan to allow the loose eggs to re-fill the space where the eggs have been pushed away and continue to gently allow the eggs to cook through.
  • Add your cheese to the top of your omelette and allow to warm through for a minute or so (depending on the amount of cheese you are using).
  • Run your spatula around the edge of the omelette and shake the pan to ensure that your omelette moving freely.
  • I tend to fold my omelette in the pan before plating up but you can serve yours any way you like.
  • Season to taste and garnish your dish with a little rocket, plumb tomatoes, spring onions and a drizzle of extra virgin olive oil to finish.
