Spicy Scrambled Eggs

Completely slim-friendly and packed full of protein, this is a simple little twist on a traditional scrambled eggs for breakfast, simply add a few diced vegetables, a little spice and loads of fun to make your scrambled eggs, your way!

Ingredients

  • 2 Large or 3 standard eggs

  • 1/4 Onion, diced

  • 1/4 Red Pepper, diced

  • Chilli infused fry-light oil.

  • 2 Smoked bacon rashers, diced

  • 1/2 Medium tomato (deseeded and diced)

  • 20g Reduced-fat cheddar

  • 2 Medium mushrooms, sliced

  • 1/2 Tsp. chilli flakes

  • Ch3opped parsley to garnish

  • Cracked black pepper

  • Salt

Directions

  • To a medium hot frying pan, add a few sprays to fry-light and diced onion, fry for 2 minutes. Add the diced bacon, continue to cook for a further 2 minutes.
  • Add the diced mushrooms and the diced red peppers, toss well to combine. Add the crushed chilli flakes, season with salt and pepper and loosen with a splash of water. and add the diced tomatoes.
  • Add the beaten eggs, keep the eggs moving with a soft spatula until cooked though. Once cooked, transfer to a serving plate, garnish with freshly chopped parsley to finish.
