Slimming World Marmite Pasta

Today I am making the absolutely gorgeous Slimming World Marmite Chicken Pasta.

Many people love it but for those who hate it, this marmite pasta dish might just tip the scales. A full list of ingredients and the official recipe can be found on the Slimming World website at www.slimmingworld.co.uk

Tip: To make this dish vegetarian, leave out the chicken or swap it for 450g chunks of plain tofu and use vegetable stock instead of chicken.

Ingredients:

low-calorie cooking spray

450g chicken breast, cut into chunks

400g dried penne or your favorite pasta shapes

200g sugar snap peas, sliced diagonally

200g broccoli, chopped into small florets

1½ tsp Marmite 200g plain quark

180ml hot chicken stock

Method:

We will start by bringing a pot of water to a boil and adding the dried pasta, cook the pasta according to the packet instructions.

Whilst the pasta is cooking we can make our pasta sauce. In a jug add some quark, some hot chicken stock, the marmite, a pinch of salt, mix until fully combined, then set aside.

Dried pasta generally takes 10 minutes to cook so once the pasta has been cooking for 7 minutes, add the sugar snap peas & broccoli. Continue to cook until the veggies are just firm to the bite.

Drain the pasta and add back into the pan. Add the pasta sauce and the cooked chicken pieces and cook for a couple of minutes to warm through and we are ready to serve.

Add your pasta to a serving dish and don’t forget to add some of that creamy marmite sauce.

Garnish with freshly chopped parsley and a little grated parmesan cheese.

If you don’t have any sugar snap peas you can use green beans or mangetout.
