SW Chilli Con-Carne

This dish is my health Slimming friendly version of the classic Chilli Con-Carne (Chilli with meat). To make this dish much healthier we are using minced beef with a maximum 5% fat content and leaving out the cooking cooking oils.

If you are on a Slimming World weight loss programme, this is a great dish to add to your weekly list of evening meals. At only 1/4 syn per serving you can fill up on this type of foods and still look forward to a health weight loss.

Chilli con carne can be served with a variety of accompaniments such as boiled rice, Jacket potato or pasta, all of which are classed as free foods (within reason) if you are on a Slimming World style diet.

Ingredients

  • 500 g Lean minced beef (5% fat maximum)

  • 1 medium onion (Diced)

  • 2 Beef OXO cubes (crushed to a powder)

  • 2 garlic cloves (Crushed or grated)

  • 1 tbsp Chilli Powder

  • 1tsp. Sweet paprika

  • 1 tbsp. Tomato puree

  • 1 tbsp. Corn flour (1 Syn per level tbsp.)

  • 1 tsp Salt

  • 1/2 Tsp. Cracked black pepper

  • 1 Red pepper (diced)

  • 1 Tin Chopped Tomatoes

  • 1 Tin Kidney Beans

  • 1/2 Litre Water

Directions

  • Bring a large pot to a medium high heat, spray with One-Cal Spay Oil. Add the minced beef and diced onion stir to combine and start the cooking process.

    Add the garlic and a pinch of salt to the pan to add flavour and help the mince to render it fats to aid the browning process. With a wooden spoon (or similar utensil) continue to stir and break up the mince as it starts to brown off evenly.
  • To really thicken up the mix (almost to a rue consistency), add the Chilli Powder, paprika, powdered OXO cubes, corn flour, Tomato puree, salt and cracked black pepper and stir through until all well combined.
  • Add the chopped tomatoes, kidney beans, chopped red peppers and a little of the water and stir through to loosen off.
  • Bring back to a boil, cover and reduce to a low simmer for 20 – 25 minutes.

    IMPORTANT NOTE: The corn flour and crushed/powdered OXO cubes with help to thicken the sauce so stir the pot regularly and add additional water if the mix becomes too thick.
