Silky Smooth Carrot & Corriander Soup

Silky Smooth Carrot & Coriander Soup
So easy to make, silky smooth, tastes and feels like restaurant quality soup.

Ingredients

  • 5 Large carrots, diced.

  • 1 medium onion, diced.

  • 1 Medium potato, diced.

  • 1 large garlic clove, diced.

  • 1.5 litres vegetable stock (2 stock cubes)

  • 1 small pack fresh coriander.

  • Fry-Light spray oil.

  • 1/2 Tsp. Sweetener (Optional)

  • Salt.

  • Cracked black pepper.

Directions

  • Add fry light and chopped onions to a pan and cook out for 5 mins. Add the garlic, carrots & Potatoe ans continue to cook for a further 2-3 mins.
  • Add the vegetable stock, chopped coriander and season with salt and freshly ground black pepper.
  • Bring to the boil, cover and reduce to a simmer until the carrots are cooked.
  • Liquidise with a stick blender or jug blender. Add the sweetener if required.
