Eggs gently poached in a sauce of chopped tomatoes, red peppers, finely diced onion, crushed garlic and a few of your favourite spices. I use smoked paprika and a splash of Tabasco sauce in my Shakshuka and season with sea salt & freshly cracked black pepper.

Slimming Friendly Spicy Mixed Bean Shakshuka.

Ingredients

  • 3-4 medium eggs

  • 1/2 tin chopped tomatoes

  • 1/2 tin mixed beans

  • 1/2 red bell pepper diced or sliced

  • 1/2 finely diced onion,

  • 2 garlic cloves, crushed

  • 1 tsp smoked paprika

  • Tabasco sauce (use to your taste)

  • Sea salt

  • Cracked black pepper

Directions

  • Cook the onions and red peppers in a little fry light spray oil for a couple of minutes, add the remaining sauce ingredients, cover and simmer for 10 minutes.
  • Remove the lid, make a couple of wells in the sauce and crack a couple of eggs into the wells.
  • Cover and simmer for 4 minutes until the egg white has cooked and firmed up.
  • Garnish with freshly chopped parsley and serve.
