Potato Omelette / Quiche

Ingredients

  • 3 medium sized potatoes (Halved and sliced).

  • 1 Medium onion (Finely chopped)

  • 2 spring onions (finely sliced)

  • 2 garlic cloves (crushed)

  • One-Cal spray olive oil

  • 6 medium eggs (whisked)

  • 3 tbsp. cottage cheese

  • 40g cheddar cheese

  • 50ml water

  • 1 tsp. salt

  • ½ tsp. ground black Pepper

Directions

  • Pre-Heat the oven to 170C
  • Place sliced potatoes into a pan of boiling water for 4-6 minutes
    to soften.
  • Bring a frying pan or skillet to a medium heat, spray with One-Cal oil and add the chopped onions.
  • Fry the onions for a few minutes. (If the pan becomes dry, add some water and continue cooking)
  • Add the garlic, salt, pepper and half of the spring onions, cook for 1 minute and remove the frying pan/skillet from the heat.
  • Drain and add the potatoes to the onion mixture and stir well to combine.
  • Blend the eggs and cottage cheese together to make a smooth liquid. Season well with salt and black pepper, pour into the frying pan and stir to evenly combine.
  • Top the mixture with cheddar cheese and sprinkle the remaining spring onions over the cheese.
  • Place in the oven for 20 minutes or until the mixture has just set.
  • Increase the temperature to 180C and continue to cook for an additional 10 minutes or until the top is golden.
